  • 1 tbsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 tsp sea salt
  • 2 tbsp granulated sugar (or coconut sugar)
  • 1/2 cup cold butter in cubes (or vegan butter) (4oz/115g)
  • 1/4 cup molasses (3oz/85g)
  • 1/2 cup milk (any kind – cow, coconut, almond, etc.)
  • 1 tsp granulated sugar (for sprinkling on top)
  • 1 tsp milk (for brushing top)
  • 1 cup powdered sugar (optional for icing)
  • 2 tbsp melted butter (or vegan butter) (optional for icing)
  • 1 tbsp maple syrup (optional for icing)
  • ½ tsp pure vanilla extract (optional for icing)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine flour, baking powder, spices, salt, and sugar.
  3. Cut cold butter into the dry mixture until it resembles small peas.
  4. Add milk and molasses; stir until just combined.
  5. Shape the dough on a parchment-lined cookie sheet to about 3/4" thick.
  6. Brush with milk and sprinkle with sugar.
  7. Cut into 8 wedges and bake for 15-20 minutes until golden brown.
  8. Optionally prepare icing by whisking powdered sugar, melted butter, maple syrup, and vanilla extract.
