  • 1 cup chopped fresh cilantro

  • Salt & pepper to taste (for dressing)

Instructions

  1. Rub chicken breasts with olive oil, lemon juice, garlic powder, paprika, salt, and black pepper.
  2. Preheat grill or grill pan over medium heat; cook chicken for 5-6 minutes per side until fully cooked (165°F internal temperature).
  3. In a mixing bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper.
  4. Combine diced avocado, cherry tomatoes, chopped cilantro, and mixed greens in a large bowl; toss gently.
