Ingredients

  • Chicken breast or tenderloins
  • Olive oil
  • Garlic powder
  • Paprika
  • Lemon juice
  • Salt & black pepper
  • Sweet potatoes, sliced into wedges
  • Smoked paprika
  • Avocado, diced
  • Cherry tomatoes, halved
  • Red onion, finely chopped
  • Fresh cilantro or parsley
  • Lime juice
  • Greek yogurt
  • Garlic (minced)
  • Fresh dill or parsley

Instructions

  1. Preheat the oven to 425°F (220°C). Toss sweet potato wedges in olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Meanwhile, mix olive oil, garlic powder, lemon juice, paprika, salt, and black pepper in a bowl. Coat the chicken and grill over medium-high heat for 6-7 minutes per side until cooked through.
  3. In another bowl, combine diced avocado, cherry tomatoes, chopped red onion, herbs, lime juice, salt, and pepper. Mix gently.
  4. For the herbed yogurt dip, blend Greek yogurt with minced garlic, fresh herbs, lemon juice, salt, and pepper until smooth.
  5. Assemble by placing grilled chicken in bowls with roasted sweet potatoes topped with avocado salsa and herbed yogurt.
