  • 4 boneless chicken thigh fillets (skin removed)
  • 3 tablespoons olive oil
  • 100 ml lime juice (freshly squeezed)
  • 2 tablespoons cilantro (chopped)
  • 2 cloves garlic (crushed)
  • 1 teaspoon brown sugar
  • 3/4 teaspoon red chili flakes (or red pepper flakes – adjust to your preference of spice)
  • 1/2 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 yellow bell pepper (deseeded and sliced)
  • 1/2 red bell pepper (deseeded and sliced)
  • 1/2 onion (sliced)
  • 5 cups Romaine lettuce (or cos lettuce leaves, washed and dried)
  • 2 avocados (sliced)
  • 1 pinch cilantro (extra to garnish)

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, cilantro, garlic, brown sugar, red chili flakes, cumin, and salt.
  2. Marinate chicken thighs in half of the marinade for at least 2 hours in the refrigerator. Reserve the other half for later use.
  3. Heat a grill pan over medium-high heat with a teaspoon of olive oil. Grill chicken thighs for 5-7 minutes on each side until cooked through and golden brown.
  4. Sauté sliced bell peppers and onion in the same pan until tender.
  5. Slice the grilled chicken and combine it with romaine lettuce, sautéed vegetables, avocado slices, and drizzle with reserved marinade before serving.
