  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt & black pepper to taste
  • 1 red onion, thinly sliced
  • 1 cup diced tomato
  • 1 tbsp chopped cilantro
  • Jalapeño (optional), finely chopped
  • Juice of lime
  • Salt to taste
  • Avocado, sliced
  • Fresh cilantro (for garnish)

Instructions

  1. In a mixing bowl, combine olive oil, lime juice, chili powder, cumin, salt, and pepper. Marinate the chicken for at least 15 minutes.
  2. Preheat the grill or grill pan over medium-high heat. Grill the chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Let it rest before slicing.
  3. To make the salsa, mix sliced red onion, diced tomato, chopped cilantro, lime juice, jalapeño (if using), and salt in a bowl. Allow it to sit for 5 minutes.
  4. Serve slices of grilled chicken topped with salsa and avocado slices. Garnish with fresh cilantro.
