  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • 1 tbsp lemon juice
  • 3 medium potatoes, peeled and cubed
  • 2 tbsp butter
  • 1 cup milk (or cream for extra richness)
  • Salt & pepper to taste
  • 2 cups fresh lettuce leaves, chopped
  • 1 cup cherry tomatoes or diced tomatoes
  • 2 tbsp olive oil
  • 1 tbsp lemon juice or balsamic vinegar
  • Salt & pepper to taste

Instructions

  1. Marinate chicken in olive oil, minced garlic, herbs, paprika, salt, pepper, and lemon juice for at least 15 minutes.
  2. Boil cubed potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter and milk until creamy.
  3. Grill marinated chicken over medium-high heat for 5-6 minutes per side until cooked through.
  4. Toss chopped lettuce and tomatoes with olive oil, lemon juice, salt, and pepper in a bowl.
  5. Serve grilled chicken alongside creamy mashed potatoes and fresh salad.
