- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 2 garlic cloves, minced
- 1 tsp dried Italian herbs (or mix of thyme, oregano, basil)
- 1 tsp smoked paprika
- Salt & pepper to taste
- 1 tbsp lemon juice
- 3 medium potatoes, peeled and cubed
- 2 tbsp butter
- 1 cup milk (or cream for extra richness)
- Salt & pepper to taste
- 2 cups fresh lettuce leaves, chopped
- 1 cup cherry tomatoes or diced tomatoes
- 2 tbsp olive oil
- 1 tbsp lemon juice or balsamic vinegar
- Salt & pepper to taste
- Marinate chicken in olive oil, minced garlic, herbs, paprika, salt, pepper, and lemon juice for at least 15 minutes.
- Boil cubed potatoes in salted water until fork-tender (12-15 minutes). Drain and mash with butter and milk until creamy.
- Grill marinated chicken over medium-high heat for 5-6 minutes per side until cooked through.
- Toss chopped lettuce and tomatoes with olive oil, lemon juice, salt, and pepper in a bowl.
