  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 tablespoons olive oil (divided)
  • 1 1/2 tablespoons rice vinegar
  • 4 garlic cloves (minced)
  • 1 tablespoon minced ginger
  • 1/2 teaspoon sesame oil
  • 1 3/4 lb boneless, skinless chicken breast (chopped into cubes)
  • Fresh cubed pineapple
  • Green peppers (diced)
  • Red onion (diced)

Instructions

  1. In a mixing bowl, whisk together ketchup, brown sugar, soy sauce, pineapple juice, 2 tablespoons olive oil, rice vinegar, garlic, ginger, sesame oil, salt, and pepper.
  2. Place chicken in a resealable bag; reserve some marinade in the fridge. Pour remaining marinade over chicken and refrigerate for at least one hour.
  3. Preheat the grill to medium heat. Toss red onion, bell pepper, and pineapple in olive oil; season with salt and pepper.
  4. Thread marinated chicken, red onion, bell pepper, and pineapple onto skewers.
  5. Grill kebabs for about 9 minutes total, brushing with reserved marinade halfway through until chicken reaches an internal temperature of 165°F.
