  • 1 Tbsp. olive oil
  • 1 medium yellow onion; diced
  • 4 tsp. garlic; minced
  • 1 lb. ground turkey
  • 1 Tbsp. brown sugar
  • 2 Tbsp. chili powder
  • 1 Tbsp. ground cumin
  • 1 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup tomato paste
  • 4 cups beef broth
  • 28 ounce can fire roasted crushed tomatoes
  • 15 ounce can kidney beans; rinsed and drained
  • 15 ounce can black beans; rinsed and drained
  • 15 ounce can pinto beans; rinsed and drained

Instructions

  1. In a Dutch oven or large pot, heat olive oil over medium-high heat. Add diced onion and minced garlic; sauté until softened, about 4 minutes.
  2. Stir in ground turkey and cook until browned and fully cooked through, approximately 5-7 minutes.
  3. Mix in brown sugar, chili powder, cumin, oregano, salt, pepper, and tomato paste until well combined.
  4. Pour in beef broth and crushed tomatoes; add all three types of rinsed beans. Stir to combine.
  5. Bring the mixture to a boil; reduce heat to low and simmer uncovered for 30 minutes, stirring occasionally.
