  • 4 chicken drumsticks
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 4 medium potatoes, peeled & cubed
  • 2 carrots, sliced
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1/2 tsp paprika
  • Salt & pepper to taste
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. In a large bowl, toss the chicken drumsticks with olive oil, paprika, oregano, garlic powder, salt, and pepper until well coated.
  3. In another bowl, mix the potatoes, carrots, red bell pepper, and onion with olive oil, paprika, salt, and pepper.
  4. Spread the seasoned vegetables in a baking dish and place the chicken on top.
  5. Roast in the preheated oven for about 50-55 minutes until the chicken is golden brown and cooked through.
