  • 1 large sweet potato
  • 2 cups broccoli florets
  • 2 tsp olive oil (1 tsp for chicken, 1 tsp for potatoes)
  • Salt and black pepper to taste
  • tsp paprika
  • tsp garlic powder

Instructions

  1. Preheat the oven to 200C (400F). Rub chicken breasts with olive oil, salt, pepper, paprika, and garlic powder. Bake for 20-25 minutes until fully cooked.
  2. Toss sweet potato rounds in olive oil and season with salt or spices. Spread on a baking sheet and roast for about 25 minutes, flipping halfway.
  3. Steam broccoli florets over boiling water for 5-6 minutes until tender-crisp.
  4. Divide chicken, sweet potatoes, and broccoli into containers for meal prep.
