  • 1 cup light brown sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1/4 cup unsalted butter (softened) for filling
  • 1/2 cup creamy peanut butter for filling
  • 1 1/2 cups powdered sugar for filling
  • 2 tablespoons milk for filling
  • 1/4 teaspoon vanilla extract for filling

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, baking soda, and salt; set aside.
  3. In another bowl, beat together softened butter, brown sugar, and peanut butter until creamy. Add the egg and vanilla extract; mix until well blended.
  4. Gradually incorporate the dry ingredients into the wet mixture until combined.
  5. Roll dough into small balls (about 1 inch in diameter) and place them on the prepared baking sheet.
  6. Bake for approximately 10 minutes or until lightly golden around the edges. Cool completely on a wire rack.
  7. For the filling, beat together softened butter and peanut butter until smooth; gradually add powdered sugar, milk, and vanilla extract until creamy.
  8. Once cookies are cool, spread or pipe filling onto half of the cookies and top with another cookie.
