  • 1 salmon fillet (approx. 120-150g)
  • 1 tsp honey
  • 1 tsp soy sauce or tamari
  • 1 tsp olive oil or sesame oil
  • 1 cup cooked basmati rice
  • Avocado, sliced
  • 1 cup cucumber, thinly sliced
  • Salt & pepper to taste
  • 1 cup cherry tomatoes (mixed colors), halved
  • 1 tbsp chopped fresh mint
  • 1 tbsp chopped parsley
  • 1 tsp olive oil
  • Squeeze of lemon juice
  • Salt & pepper

Instructions

  1. Marinate the salmon fillet by mixing honey, soy sauce (or tamari), and olive oil in a bowl, then brush over the salmon.
  2. Heat a non-stick skillet over medium-high heat and cook the marinated salmon for 3-4 minutes per side until caramelized.
  3. In another bowl, combine halved cherry tomatoes with chopped mint and parsley, drizzle with olive oil, squeeze lemon juice, season with salt and pepper, then toss gently.
  4. In a serving bowl, layer cooked basmati rice followed by the pan-seared salmon. Add sliced avocado, cucumber slices, and finish with the tomato herb salad on top.
