  • 1 pound ground turkey or chicken sausage (casings removed)
  • 1 large yellow onion (finely diced)
  • 3 medium carrots (finely diced)
  • 2 medium celery ribs (finely diced)
  • 4 cloves garlic (minced)
  • 5 cups low sodium chicken broth
  • 1 can cannellini beans (14.5 ounces) (rinsed and drained)
  • 1 can red kidney beans (14.5 ounces) (rinsed and drained)
  • 1 can diced tomatoes (15 ounces) (with juices)
  • 1 can tomato sauce (16 ounces)
  • 1 tablespoon olive oil
  • Fresh herbs: rosemary, thyme, parsley
  • 1 cup dried pasta (elbow macaroni or ditalini)

Instructions

  1. In a large pot over medium-high heat, brown the ground turkey or chicken sausage for about 4–5 minutes.
  2. Add onions, carrots, celery, rosemary, thyme, and parsley; sauté for approximately 6 minutes until softened.
  3. Stir in minced garlic and cook for an additional minute.
  4. Pour in the chicken broth along with cannellini beans, kidney beans, diced tomatoes, tomato sauce, bay leaves, salt, and pepper; bring to a boil.
  5. Reduce heat and simmer for about five minutes before adding pasta; cook for another 9–10 minutes until al dente.
  6. Remove bay leaves and fold in grated Parmesan cheese until melted.
  7. Adjust thickness with additional broth if needed; season to taste before serving.
