  3. Pour in chicken broth, scraping the bottom of the pot to dissolve any remaining tomato paste; bring to a boil.
  4. Add cubed potatoes and diced carrots; reduce heat and simmer uncovered for 15–25 minutes until fork-tender.
  5. Stir in fresh spinach; cook for another 2–3 minutes until wilted.
  6. Lower heat and gently stir in heavy cream; season with salt as desired.
