  • 2 Leinsamen-Eier (2 EL gemahlene Leinsamen + 6 EL Wasser)

  • 1 Prise Meersalz
  • 360 g Äpfel (geschält, entkernt und gewürfelt)
  • 1 EL Zitronensaft (oder Limettensaft)
  • 480 ml Wasser
  • 84 g Kristallzucker
  • 28 g Speisestärke
  • 1 TL Zimt
  • 1 Prise Muskatnuss
  • 1 Prise gemahlene Nelken
  • 150 g fester Tofu
  • 100 g Cashewnüsse (eingeweicht)
  • 120 ml Kokosmilch (aus der Dose)
  • 85 g Ahornsirup (oder ein anderes flüssiges Süßungsmittel)
  • 34 EL Limettensaft (oder Zitronensaft)
  • 25 g Speisestärke
  • 1 TL Vanilleextrakt
  • 20 g Ahornsirup (oder ein anderes flüssiges Süßungsmittel)
  • 60 ml Kokosmilch (aus der Dose)
  • 20 g brauner Zucker (oder Dattelzucker)
  • 20 g Nussmus (nach Wahl)
  • 1 Prise Meersalz

Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a 24 cm baking pan.
  2. Combine gluten-free flour, ground almonds, sugar, and salt in a bowl. Add softened vegan butter and flaxseed eggs; mix until blended.
  3. Press the dough into the prepared pan and bake for about 15 minutes until golden.
  4. Cook diced apples with water, sugar, and spices until soft; set aside.
  5. In a blender, mix tofu, soaked cashews, coconut milk, maple syrup, lime juice, cornstarch, and vanilla until smooth.
  6. Layer apple filling over the baked crust, then pour the cheesecake mixture on top.
  7. Bake for about 30 minutes or until set; cool completely before serving.
