  • 2 tbsp Kashmiri green tea (or other green tea)
  • 1/2 tsp Baking soda
  • 12 Star anise
  • 2 Cardamom pods (crushed)
  • 1 Cinnamon stick
  • 1/4 tsp Salt
  • 2 cups Whole milk
  • Sugar or honey to taste
  • Crushed nuts (e.g., almonds) for garnish (optional)

Instructions

  1. Boil water in a saucepan. Add green tea and boil for about 5 minutes.
  2. Stir in baking soda; the mixture will turn deep red. Continue boiling for an additional 2 minutes.
  3. Add star anise, crushed cardamom pods, and cinnamon stick. Boil for another minute.
  4. Reduce heat and simmer for 20-30 minutes until reduced by half.
  5. Add salt and mix well.
  6. Pour in whole milk, increase heat, and bring to a boil while stirring continuously until the mixture turns pink.
  7. Remove from heat and strain into cups to remove spices and leaves.
  8. Sweeten with sugar or honey as desired, and garnish with crushed nuts if using.
