  • 4 salmon fillets (6 oz each)
  • 1/2 cup unsalted butter (1 stick)
  • 2 lemons (juice of 1, slices from the other)
  • 4 cloves garlic (minced)
  • 4 medium potatoes (about 2 lbs)
  • 1 lb broccoli florets
  • Olive oil
  • Salt
  • Black pepper
  • Paprika

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper if desired.
  2. Cut the potatoes into cubes and toss them in a large bowl with olive oil, salt, pepper, and paprika.
  3. Spread the potatoes on one side of the baking sheet and roast for 25 minutes until golden brown.
  4. In a saucepan over medium heat, melt the butter and sauté minced garlic for 1-2 minutes. Add lemon juice and season to taste.
  5. After roasting the potatoes for 15 minutes, push them aside and place seasoned salmon fillets in the cleared space on the baking sheet.
  6. Spoon the lemon butter sauce over the salmon, add lemon slices on top, then toss broccoli with olive oil and seasonings on the other side of the baking sheet.
  7. Roast everything together for an additional 15-20 minutes until cooked through.
  8. Let rest before serving.
