  • 12 oz spaghetti or fettuccine
  • 1 lb chicken breast, sliced into strips
  • 1 tablespoon olive oil
  • 1 bunch asparagus, trimmed and cut into pieces
  • 3 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1/4 cup heavy cream
  • Zest and juice of 1 lemon
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Cook pasta according to package instructions; reserve 1/2 cup pasta water before draining.
  2. In a large skillet, heat olive oil over medium heat. Add chicken strips seasoned with salt and pepper; cook until browned (6-7 minutes). Remove and set aside.
  3. In the same skillet, sauté garlic for 30 seconds until fragrant. Add asparagus and cook for 3-4 minutes until tender but crisp.
  4. Pour in chicken broth and heavy cream; stir in lemon zest, lemon juice, and Italian seasoning. Let simmer for 2-3 minutes.
  5. Return chicken to skillet along with drained pasta; toss everything together, adding reserved pasta water if needed.
  6. Stir in grated Parmesan cheese; cook for another minute until heated through.
  7. Garnish with fresh parsley before serving warm.
