  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • Juice and zest of 1 lemon
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves
  • Salt and pepper (to taste)

Instructions

  1. Pound chicken breasts to an even thickness and season with salt and pepper.
  2. Heat olive oil in a large sauté pan over medium-high heat. Cook chicken for 3-4 minutes on each side until golden brown. Remove from pan.
  3. In the same pan, sauté minced garlic for 1 minute. Add chicken broth, lemon juice, and zest; bring to a boil. Reduce heat, stir in heavy cream, and simmer for 5 minutes.
  4. Add spinach to the sauce; cook until wilted. Return chicken to the pan, spoon sauce over it, sprinkle with additional Parmesan, cover, and cook for another 2 minutes.
  5. Serve garnished with thinly sliced lemon and extra Parmesan.
