  • 1 cup cold milk
  • 2 large eggs
  • 2 tablespoons canola oil + more for frying
  • 1 cup all purpose flour
  • pinch of salt
  • 2 tablespoons sugar
  • 8 oz. ricotta cheese
  • zest of 1 lemon
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 24 tablespoons milk

Instructions

  1. Prepare the batter by blending cold milk, eggs, canola oil, all-purpose flour, salt, and sugar until smooth. Refrigerate for 1-2 hours if time allows.
  2. Heat a non-stick skillet over medium-high heat and coat it lightly with canola oil. Pour in a small amount of batter and swirl to cover the bottom evenly. Cook until golden brown (about 20 seconds), then flip and cook the other side for another 15 seconds. Repeat with remaining batter.
  3. For the filling, blend ricotta cheese, lemon zest, granulated sugar, and vanilla until smooth.
  4. Fill each warm crepe with the lemon ricotta mixture, roll or fold them as desired, and serve topped with powdered sugar or your favorite toppings.
