  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup canola oil
  • ½ cup buttermilk
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup shredded zucchini

Instructions

  1. Preheat your oven to 350°F and prepare four mini loaf pans or one large loaf pan by greasing them.
  2. In a mixing bowl, whisk together the flour, baking powder, and salt.

  4. Fold in the shredded zucchini.
  5. Gradually combine the dry mixture into the wet mixture until just blended (do not overmix).
  6. Pour batter into prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  7. Let cool slightly before glazing with powdered sugar mixed with lemon juice.
