  • avocado, sliced
  • 1 cup romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 2 tbsp crumbled feta cheese
  • 2 tbsp Kalamata olives
  • 1 tbsp extra virgin olive oil
  • 1 tsp apple cider vinegar or lemon juice
  • Salt & black pepper to taste
  • Chopped fresh parsley (optional)

Instructions

  1. Boil eggs for 7-8 minutes until hard-boiled. Cool in ice water, then peel and quarter.
  2. In a mixing bowl, combine chopped romaine lettuce, diced cucumber, and halved cherry tomatoes.
  3. Top the salad base with sliced grilled chicken, avocado slices, quartered eggs, crumbled feta cheese, and Kalamata olives.
