  • 160 g all-purpose flour
  • 60 g powdered sugar
  • 115 g unsalted butter, cold and cubed
  • 1 egg yolk
  • 1 medium apple, peeled and diced
  • 80 g mixed berries (fresh or frozen)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1 tsp cornstarch

Instructions

  1. Prepare the shortbread crust by mixing flour and powdered sugar in a bowl. Add cold butter and mix until crumbly. Stir in egg yolk; add cold water if needed. Shape into a disk, wrap in plastic wrap, and chill for at least 30 minutes.
  2. Make the filling by combining diced apple, mixed berries, sugar, lemon juice, cinnamon, and cornstarch in a bowl.
  3. Preheat oven to 180°C (350°F). Roll out chilled dough to about ¼ inch thick; cut into circles slightly larger than your pie dish.
  4. Press dough into a greased pie dish, fill with berry mixture, and bake for 25-30 minutes until golden brown.
