  • 1 cup panko bread crumbs

  • Salt & pepper
  • 8 slices turkey bacon

  2. Divide the mixture into 8 equal portions and shape them into mini meatloaves on a lined baking sheet.
  3. Cut turkey bacon slices in half and lay them in a criss-cross pattern over each meatloaf. Tuck the ends underneath.
  4. Preheat oven to 350°F and bake for approximately 50 minutes or until cooked through. For extra crispiness, broil for an additional 3–5 minutes.
