  • 15 oz Great Northern Beans
  • 15 oz Kidney Beans
  • 14 oz diced tomatoes
  • 8 oz tomato sauce
  • 1 cup Ditalini Pasta
  • 6 cups chicken stock
  • 1 cup onion (roughly chopped)
  • 1.5 tbsp garlic (minced)
  • 3/4 cup carrot (roughly cubed)
  • 3/4 cup celery (roughly chopped)
  • 3 tbsp Olive Oil
  • Salt (to taste)
  • 1 tsp Paprika
  • 1/4 tsp oregano (dried)
  • 1/2 tsp Italian seasoning (dried)
  • 1.5 tsp Ground Black Pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 tbsp Worcestershire sauce (use substitute if desired)
  • Parsley (fresh flat leaf, chopped for garnish)
  • Extra Virgin Olive Oil (for drizzling)

Instructions

  1. Set the Instant Pot to SAUTE mode and heat olive oil.
  2. Add ground beef and sauté until browned.
  3. Stir in chopped onion and minced garlic; sauté until fragrant.
  4. Add carrots and celery; cook for another minute.
  5. Pour in chicken stock and scrape the pot to de-glaze.
  6. Mix in paprika, oregano, Italian seasoning, Worcestershire sauce, red pepper flakes, and salt.
  7. Incorporate diced tomatoes, tomato sauce, drained beans, and pasta; combine thoroughly.
  8. Cancel SAUTE function and pressure cook on HIGH for 4 minutes.
  9. Release pressure quickly by moving the valve to VENTING.
  10. Open the lid carefully and serve immediately garnished with parsley.
