  • 2 large chicken breasts
  • 500g baby potatoes, halved
  • 300g fresh green beans, trimmed
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 1 tsp dried rosemary
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 200C (400F).
  2. Toss halved baby potatoes with 1 tbsp olive oil, rosemary, salt, and pepper; spread on one side of a baking dish.
  3. In another bowl, mix 2 tbsp olive oil, garlic powder, paprika, oregano, salt, and pepper; coat the chicken breasts and place them in the center of the baking dish.
  4. Bake for 20 minutes until golden brown.
  5. Toss green beans with 1 tbsp olive oil, salt, and pepper; add to the baking dish after 20 minutes.
  6. Return to the oven for another 20 minutes until everything is cooked through.
