  • 1 tablespoon orange zest
  • 1 ¼ cup boiling water
  • ⅓ cup fresh squeezed orange juice
  • 15 ounces can of mandarin oranges (do not drain)
  • 3.5 ounces vanilla instant pudding mix
  • 8 ounces whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a mixing bowl, combine the cake mix, eggs, milk, vegetable oil, and orange zest; beat for about 2 minutes until smooth.
  3. Pour the batter into the prepared pan and bake for approximately 28 minutes or until a toothpick inserted comes out clean.
  4. While baking, dissolve the gelatin in boiling water and stir in the fresh orange juice.
  5. Once baked, cool the cake for about 10 minutes before poking holes all over the surface with a fork or skewer.
  6. Pour the gelatin mixture over the warm cake, allowing it to seep into the holes.
  7. Top with undrained mandarin oranges evenly.
  8. In another bowl, whisk together vanilla pudding mix with whipped topping until smooth.
  9. Frost the cooled cake and refrigerate for at least an hour before serving.
