  • 4 1/4 cups low sodium chicken broth
  • 1/4 cup lemon juice
  • 1/2 red onion (chopped)
  • 2 ears grilled corn (cut off the cob)
  • 1 English cucumber (sliced and quartered)
  • 1 red bell pepper (chopped)
  • 1 pint cherry tomatoes (halved)
  • 1 can garbanzo beans (drained and rinsed)
  • 1/2 cup pitted Kalamata olives (halved)
  • 1/2 cup sliced almonds
  • 1/2 cup fresh basil (chopped)
  • 1/2 cup feta
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 teaspoon sugar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons red apple vinegar
  • 1 TBS EACH fresh dill, parsley, oregano (OR 1 tsp EACH dried)

Instructions

  1. Prepare the dressing by whisking together olive oil, vinegar, lemon juice, herbs, sugar, Dijon mustard, garlic powder, salt, and pepper in a jar. Refrigerate until needed.
  2. In a large nonstick skillet over medium-low heat, melt butter with olive oil. Add orzo and chopped red onions; sauté for about 3–5 minutes.
  3. Stir in chicken broth and lemon juice; season with salt and pepper. Simmer until orzo is al dente (about 8–10 minutes). If excess liquid remains, drain the orzo.
  4. Transfer cooked orzo to a large bowl and cool in the refrigerator while chopping the remaining vegetables.
  5. Combine all salad ingredients including the cooled orzo in the bowl. Pour the dressing over and toss until well mixed.
  6. Taste and adjust seasoning as needed before serving.
