Ingredients

  • 1 salmon fillet (about 150g)
  • 1 large egg
  • 1 cup fresh spinach leaves
  • 1 cup sliced mushrooms
  • Diced avocado
  • 1 tbsp olive oil (divided)
  • Salt and freshly cracked black pepper to taste
  • 1 small garlic clove, minced (optional)

Instructions

  1. Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium heat. Season the salmon with salt and pepper.
  2. Cook the salmon skin-side down for 3-4 minutes; flip and cook for another 2-3 minutes until done.
  3. In a separate small pan, heat a drizzle of oil and cook the egg sunny-side up until the whites are set.
  4. In the same skillet as the salmon, add sliced mushrooms and sauté until golden brown; add minced garlic if desired.
  5. Quickly sauté the spinach in a drizzle of olive oil until wilted.
  6. Plate the salmon alongside the egg, sautéed mushrooms, spinach, and diced avocado. Sprinkle with extra pepper before serving.
