  • 4 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sambal oelek (chili paste)
  • 12 leaves of lettuce (Boston or romaine)
  • 1/2 cup chopped peanuts
  • Juice of 2 limes
  • Fresh cilantro and green onions for garnish

Instructions

  1. In a bowl, whisk together soy sauce, sesame oil, sambal oelek, lime juice, minced garlic, green onions, and ginger.
  2. Mix the ground chicken or turkey with about 3/4 of the sauce and let it marinate for at least 15 minutes.
  3. Heat a skillet over medium heat and cook the marinated meat for about 10 minutes until fully cooked. Add chopped peanuts and rice noodles; stir-fry for another 5 minutes.
  4. Remove from heat and scoop spoonfuls into lettuce leaves. Top with additional sauce and garnishes before serving.
