  • 6 pieces Bone-In Skin-On Chicken
  • 1 teaspoon Salt
  • 23 tablespoons Olive Oil
  • 1 Red Onion
  • 4 Garlic Cloves
  • 2 Cups Water
  • ¼ teaspoon Turmeric
  • 1½ teaspoons Cinnamon
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • 1 teaspoon Black Pepper
  • ½ teaspoon Cardamom
  • ½ teaspoon Allspice
  • ¼ teaspoon Nutmeg
  • ¼ teaspoon Ground Cloves
  • Almonds (for garnish)

Instructions

  1. Soak the basmati rice in a large bowl of water for at least 30 minutes.
  2. Season the chicken with salt and the spice blend thoroughly.
  3. In a heavy-bottomed pan, heat olive oil over medium heat. Sauté chopped garlic and sliced onions until fragrant.
  4. Move the sautéed mixture aside; add marinated chicken to brown on both sides for about 5 minutes each.
  5. Add water until boiling; incorporate soaked rice and turmeric.
  6. Cover and let simmer until both rice and chicken are cooked through.
  7. Gently place the chicken on top of the rice and garnish with fried onions and sliced almonds before serving.
