  • 6 Persian cucumbers (or 2 English cucumbers)
  • 6 medium Roma tomatoes
  • 1 small red onion
  • 3 small Persian limes (or 1 large lemon)
  • 2 tablespoons dried mint
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Peel and finely chop the red onion.
  2. Cut the cucumber in half lengthwise, slice into quarters, and then finely chop.
  3. Halve each Roma tomato, remove seeds, and chop into small pieces.
  4. In a small bowl, squeeze lime juice; add salt, pepper, and dried mint.
  5. Combine chopped vegetables in a mixing bowl, pour dressing over, and mix well.
  6. Just before serving, drizzle olive oil on top and toss gently.
