  • 1 lb boneless, skinless chicken thighs (marinated)
  • 1 cup fresh pineapple (cubed)
  • 8 small tortillas (flour or corn)
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp lime juice
  • Optional: sliced jalapeño, sliced avocado, diced red onion, chopped cilantro

Instructions

  1. Marinate chicken thighs in chili powder, cumin, paprika, and lime juice for at least 30 minutes.
  2. Preheat grill or grill pan over medium-high heat. Grill marinated chicken for 6–7 minutes on each side until cooked through. Let rest before slicing.
  3. While chicken is grilling, prepare toppings: cube pineapple, slice jalapeño and avocado, dice red onion, chop cilantro.
  4. Warm tortillas on a skillet for about 30 seconds per side.
  5. Assemble tacos by placing sliced chicken on tortillas and topping with pineapple, jalapeño, avocado, red onion, and cilantro.
  6. Serve warm with lime wedges.
