  • ¾ cup granulated sugar

  • 1 teaspoon clear vanilla extract
  • 1 egg (room temperature)
  • 1 cup white chocolate chips
  • ½ cup chopped pistachios

Instructions

  1. Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, pistachio pudding mix, baking soda, and salt.
  3. In another bowl, cream light brown sugar, granulated sugar, and softened butter until fluffy.
  4. Beat in the egg and clear vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined. Optional: add food coloring for deeper green hue.
  6. Fold in white chocolate chips and chopped pistachios.
  7. Chill the dough for at least 30 minutes.
  8. Scoop rounded tablespoons of dough onto the prepared baking sheet.
  9. Bake for 12–14 minutes until set but not brown. Press extra white chocolate chips into warm cookies if desired.
  10. Cool on the baking sheet before transferring to a wire rack.
