  1. Clean the octopus by removing the beak and eyes, rinsing thoroughly under cold water.
  2. In a large pot, bring water to a boil with parsley and bay leaf. Immerse the tentacles repeatedly until they curl, then fully submerge the octopus and simmer on low heat for about 40 minutes.
  3. Once cooked, let the octopus cool in its cooking water.
  4. Prepare the marinade by mixing chopped garlic, olive oil, and black pepper; coat the cooled octopus and let it marinate for at least 1 hour.
  5. For the sauce, combine lemon zest, capers, parsley, olives, olive oil, and lemon juice in a bowl.
  6. Preheat a greased grill and grill the octopus for 3 minutes on each side until charred.
