  • 1/2 cup unsalted butter (cut into about 8 pieces)
  • 4 ounces dark chocolate (finely chopped)
  • 1 cup granulated sugar
  • 2 large eggs (whisked)
  • 1/2 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 1/4 teaspoon salt
  • 1 cup pumpkin puree (NOT the entire can)
  • 1 cup evaporated milk (NOT the entire can)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/8 teaspoon ginger powder
  • 1/8 teaspoon ground cloves
  • 1 tablespoon cornstarch (AKA cornflour)

Instructions

  1. Preheat oven to 325°F (170°C) and prepare an 8×8 inch baking pan by lining it with aluminum foil and greasing the foil lightly.
  2. In a saucepan over low heat, melt unsalted butter and dark chocolate together until smooth. Remove from heat and stir in granulated sugar.
  3. Mix in whisked eggs one at a time until fully incorporated. Sift in flour, cocoa powder, and salt; fold until combined.
  4. In a separate bowl, whisk together pumpkin puree, evaporated milk, an egg, vanilla extract, brown sugar, spices, and cornstarch until smooth.
  5. Pour brownie batter into the prepared pan; spread evenly. Carefully layer pumpkin filling on top.
  6. Bake for about 50 minutes or until set in the center. Let cool completely before cutting into squares.
