  • 1 cup canned pumpkin puree
  • ½ cup white granulated sugar
  • ½ cup light brown sugar (packed)
  • ½ cup vegetable oil
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease or line a muffin tin.
  2. In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, and spices until well combined.
  3. In another bowl, mix the eggs, pumpkin puree, sugars, and vegetable oil until just combined.
  4. Gradually fold the dry ingredients into the wet mixture until combined.
  5. Gently fold in the chocolate chips.
  6. Spoon the batter into muffin tins and bake for about 16 minutes for mini muffins or 22-24 minutes for full-size muffins until a toothpick comes out clean.
  7. Allow to cool in the tins for a few minutes before transferring to a wire rack.
