  • 2 cups heavy cream
  • 1/3 cup granulated sugar (plus extra for topping)
  • 4 large egg yolks
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Prepare mini pumpkins by cutting off the tops and scooping out seeds, or set ramekins aside.
  3. In a mixing bowl, whisk egg yolks and sugar until combined.
  4. Heat heavy cream in a saucepan until steaming, then slowly whisk into the egg mixture.
  5. Stir in pumpkin puree, vanilla extract, cinnamon, ginger, and salt until smooth.
  6. Pour custard into prepared containers and place them in a baking dish filled with hot water halfway up their sides.
  7. Bake for about 30 minutes until edges are set but centers are slightly wobbly. Cool completely.
  8. Before serving, sprinkle sugar on top of each custard and caramelize with a kitchen torch until golden brown.
