  • 2 Tbsp granulated sugar
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/8 tsp ginger
  • 1/8 tsp nutmeg
  • 1 1/2 cups whole milk
  • 1/2 cup pumpkin puree
  • 3 large eggs
  • 3 Tbsp unsalted butter (melted, plus more for pan)
  • 8 oz cream cheese (softened)
  • 1/2 cup confectioners' sugar
  • 3 Tbsp maple syrup

Instructions

  1. In a blender, combine flour, sugar, salt, spices, milk, pumpkin puree, eggs, and melted butter. Blend until smooth and let rest for at least 30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly grease with butter. Pour about ΒΌ cup of the batter into the pan, swirling to cover evenly.
  3. Cook for about 1 to 1Β½ minutes until golden brown on the bottom. Flip carefully and cook for another minute.
  4. Remove from the skillet and repeat with remaining batter.
  5. For the filling, mix softened cream cheese, confectioners' sugar, and maple syrup until smooth.
  6. Spread filling onto warm crepes, fold them over, and serve immediately.
