  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tablespoon pumpkin pie spice
  • 2 large eggs
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased or parchment-lined 9×13-inch baking dish.
  2. In a large bowl, mix flour, oats, brown sugar (1 cup), baking soda, and salt. Stir in melted butter until combined to form the crumble mixture.
  3. Press half of the crumble mixture into the prepared baking dish as the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar (1/4 cup), eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin filling over the crumble base and spread evenly.
  6. Sprinkle the remaining crumble mixture on top and add chopped walnuts if desired.
  7. Bake for about 30–35 minutes until golden brown and set. Allow to cool before cutting into squares.
