  • 2 soft-boiled eggs
  • 1 kiwi, peeled and sliced
  • 1 tomato, sliced
  • 1 cup cauliflower florets, finely chopped
  • 23 tbsp feta cheese, cubed
  • 1 tbsp black olives
  • Small bunch fresh parsley
  • Pinch of chili flakes (optional)
  • Pinch of black sesame seeds (for garnish)
  • Salt & pepper, to taste

Instructions

  1. Boil the eggs: Bring water to a boil in a pot. Gently add the eggs and cook for 7 minutes. Cool under cold water, peel, and slice in half.
  2. Prepare the veggies & fruit: Slice the kiwi and tomato while finely chopping the cauliflower florets.
  3. Assemble the plate: Arrange kiwi slices, tomato slices, cauliflower, parsley, feta cubes, and olives on a serving plate. Place boiled eggs in the center.
  4. Season & garnish: Sprinkle chili flakes on top of the eggs if desired and garnish feta with black sesame seeds. Add salt and pepper to taste.
