  • 2 eggs
  • 1/2 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1 garlic clove, sliced thin
  • 1 kiwi, peeled and sliced
  • 45 strawberries, halved
  • 1/2 tsp olive oil
  • Salt, pepper & chili flakes to taste

Instructions

  1. In a small pan, heat olive oil over medium heat. Add sliced garlic for about 30 seconds until fragrant. Stir in baby spinach until wilted; season lightly with salt.
  2. In a non-stick skillet over medium-low heat, fry the eggs sunny-side-up until whites are set and yolks are runny. Season with salt and pepper as desired.
  3. While the eggs cook, slice kiwi and strawberries. Toss halved cherry tomatoes with salt and chili flakes in a bowl.
  4. Arrange sautéed spinach on one side of a plate, place sunny-side-up eggs next to it, and add an attractive display of sliced kiwi, strawberries, and seasoned cherry tomatoes.
