  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberries for decoration

Instructions

  1. Grind freeze-dried raspberries into a fine powder using a food processor. Transfer to a bowl with white chocolate melting wafers.
  2. Heat heavy cream in a saucepan until simmering; pour over the raspberry powder and white chocolate. Let sit, then stir until smooth.
  3. Chill the mixture in the refrigerator for 45 minutes to 1 hour.
  4. Scoop and roll the chilled mixture into balls, placing them on a parchment-lined baking sheet. Refrigerate again for an hour.
  5. Melt dark chocolate in a heatproof bowl over simmering water; dip each truffle, allowing excess to drip off before placing them back on the baking sheet.
  6. Drizzle additional melted chocolate and sprinkle crushed freeze-dried raspberries on top. Chill again until set.
