  • 3 cups finely chopped red bell pepper
  • 1 cup finely chopped green bell pepper
  • 1/4 cup finely chopped jalapeño pepper
  • 1 cup apple cider vinegar
  • 1 1/2 packages SURE-JELL powder pectin (1.75 ounces each)
  • 5 cups white sugar

Instructions

  1. Sterilize six 8-ounce canning jars and lids.
  2. In a large saucepan over high heat, combine the red and green bell peppers, jalapeño, apple cider vinegar, and SURE-JELL pectin. Bring to a rolling boil while stirring.
  3. Once boiling, quickly stir in the sugar and return to a rolling boil for 2-3 minutes. Remove from heat and skim off any foam.
  4. Ladle the jelly into prepared jars, filling each to 1/4 inch from the top. Seal with lids and bands.
  5. Process jars in boiling water for five minutes before cooling on a towel or rack.
