150g salmon fillet
1 cup uncooked brown rice
2 eggs
Diced avocado
1 tsp balsamic glaze (optional)

Instructions
Rinse brown rice under cold water. Cook with 1 cup of water and a pinch of salt in a pot over medium heat until tender (25-30 minutes).
Preheat the oven to 180°C (350°F). Season the salmon fillet with salt and pepper and bake for 12-15 minutes.
Soft-boil the eggs by cooking them in boiling water for 6-7 minutes. Transfer to an ice bath for 5 minutes before peeling.
In a bowl or plate, layer cooked brown rice, baked salmon, diced avocado, and halved soft-boiled eggs. Season lightly and drizzle with balsamic glaze if desired.
