  • 180 g butter (room temperature)
  • 300 g granulated sugar
  • 4 large eggs (room temperature)
  • 240 g Greek yogurt or buttermilk (room temperature)
  • 60 g vegetable oil (e.g. canola oil)
  • 2 tsp vanilla extract
  • 140 g granulated sugar (for salted caramel)
  • 1 1/2 tbsp water (for salted caramel)
  • 40 g butter (for salted caramel)
  • 150 g heavy cream (for salted caramel)
  • big pinch of salt (for salted caramel)
  • 400 g butter (for buttercream)
  • 660 g powdered sugar
  • 2 tsp vanilla extract (for buttercream)
  • 23 tbsp homemade salted caramel (for buttercream)

Instructions

  1. Prepare the salted caramel by heating sugar and water until golden brown, then whisk in butter and heavy cream with salt.
  2. Preheat your oven to 350°F (175°C). Whisk together dry ingredients in one bowl and beat butter and sugar until fluffy in another. Add eggs one at a time, followed by Greek yogurt or buttermilk, oil, and vanilla.
  3. Combine wet and dry ingredients until smooth, then divide batter between two greased 9-inch pans.
  4. Bake for about 20 minutes or until a toothpick comes out clean. Let cool before frosting.
  5. For the buttercream, beat room temperature butter until creamy, then gradually add powdered sugar and mix in vanilla and salted caramel to taste.
  6. Assemble the cake by layering salted caramel between the cakes and frosting generously with buttercream.
