  • 2 slices whole grain or sourdough bread
  • 2 soft-boiled eggs
  • 1 cup fresh spinach
  • 45g cremini mushrooms, sliced
  • 1 tbsp cream cheese or cashew spread
  • 2 slices fresh tomato
  • Olive oil or butter for sautéing
  • Salt and pepper to taste

Instructions

  1. Boil water in a saucepan. Gently lower in eggs and boil for about 7 minutes for soft centers. Transfer to an ice bath before peeling.
  2. In a frying pan, heat olive oil over medium heat. Sauté sliced mushrooms until golden brown, then add spinach until wilted.
  3. Spread cream cheese on one slice of toast and top with tomato slices; pile sautéed mushrooms on the second slice.
  4. Arrange the toast, halved soft-boiled eggs, and sautéed spinach on a serving plate. Season with salt, pepper, and garnish with parsley.
