  • 2 lbs Yukon Gold potatoes, thinly sliced
  • 3 large sweet onions, sliced
  • 4 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tsp fresh thyme, chopped
  • Salt and pepper to taste
  • 2 cups low-sodium beef broth
  • 1 ½ cups Gruyère cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, melt the unsalted butter and add sliced sweet onions. Cook until golden brown.
  3. Add minced garlic and thyme; cook until fragrant.
  4. Layer half of the potatoes in the greased baking dish, followed by half of the onion mixture. Repeat with another layer of potatoes and onions.
  5. Pour beef broth over the layers and top with shredded Gruyère cheese.
  6. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 15 minutes until golden brown.
