  • 1/4 cup sliced mushrooms
  • 1/4 cup diced sweet potato
  • 1 green chili or jalapeño, sliced
  • 1 tsp olive oil (for sautéing)
  • 1/2 avocado, sliced

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add diced sweet potatoes and cook for 3-4 minutes. Then add broccoli, mushrooms, and green chili. Sauté for another 4-5 minutes until the veggies are tender and slightly charred. Season with salt and pepper.
  2. In a mixing bowl, whisk together the eggs with a splash of milk, salt, and pepper. In another pan, heat butter or olive oil over low-medium heat. Pour in the egg mixture and gently stir until soft and creamy; sprinkle shredded cheese on top while warm.
