  • 12 lasagna noodles, cooked and drained
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach, chopped
  • 1/2 tsp nutmeg
  • Salt and pepper, to taste
  • 2 cups ricotta cheese
  • 1 egg, beaten
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup heavy cream

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until fragrant, then add mushrooms and cook until tender. Stir in spinach, nutmeg, salt, and pepper until wilted.
  3. In a bowl, mix ricotta cheese with beaten egg, remaining Parmesan cheese, and basil until smooth.
  4. In a saucepan, melt butter over medium heat; whisk in flour until golden. Gradually add milk and cream while whisking until thickened; season with salt and pepper.
  5. Layer lasagna in the baking dish: spread white sauce on the bottom, followed by noodles, ricotta mixture, spinach mixture, and mozzarella. Repeat layers until all ingredients are used.
  6. Cover with foil and bake for 25 minutes; uncover and bake for an additional 15 minutes until the top is bubbly and golden.
  7. Let rest for 10 minutes before slicing.
